Zelen
Zelen is an autochthonous grape variety from the valley of the river Vipava. Its noble qualities were extolled by the author and viticulturist Matija Vertovec in the first half of the nineteenth century. Along with Pinela, Zelen is to the Vipava Valley what Vitovska is to the Karst: the pride of winemakers and a reason to uncover new layers of local wine experiences.

MACERATION 4 days in open vats/manual pigeage and bâtonnage/decanting/ 6 months tino (conical wooden barrel) with addition of 1/3 of grapes
MATURATION 5 months – acacia barrels and concrete eggs
Opmerking Aldovino
Dit is de wijn die mij bracht naar Stemberger en is nog steeds favoriet.
Niet decanteren maar paar keer goed zwenken.
