Sauvignon 2018
Not your typical Sauvignon Blanc, this fragrant seducer delivers aromas of sweet peach, honey, narcissus, lemon drop, and white pepper. It enters the mouth with a wide embrace, then tapers to an elegant, soft grip on the finish. Because of its botanical undertone, this is an amiable companion to bright daylight. It adds the finishing touch to appetizers such as Greek salad, tempura, and shellfish. With mild- tasting cheeses like mozzarella and camembert, the wine gains a fuller body.

Region: Goriška Brda (ZGP Brda), Slovenian side of Collio region
Vineyards: - Gredič vineyard: South exposure, 6000 plants/ ha, age of vineyard 15 years, Mono Guyot training system
- Turno vineyard: Northeast exposure, 5500 plants/ ha, age of vineyard 25 years, Mono Guyot training system
Soil: Opoka soil (marl & lime stone)
Planting system: 2,3m x 0,7
Yield per hectare: 5000 kg
Harvest: Hand picked in the beginning of SeptemberVinification process: Grapes are desteemed and put in vinificator with skins. After 2 days of cold maceration we press the grapes and naturally clarify the grape juice. Fermentation then starts in the inox tanks and finishes in the barriques.
Aging: Barrique (225 l French oak barrels) for 18 months. Bottling: April 2020
Finning: 4 months in bottles
