Puro rosé: sparkling
Puro, it fills the room with a feeling of mysterious anticipation while opening it.
Brilliant, cherry pink in colour, with a slight tinge of copper. It forms long chains of tiny bubbles that bloom elegantly at the top.
Its intense bouquet evokes scents of orange peel, ripe peach, raspberry, currant, red rose, roasted almonds, notes of wild mint, as well as butter and rye bread crust.
Brut Nature with perceivable softness. Alcohol is nicely incorporated and aligns well with an intense refreshing feeling and mineral salinity of the wine. The latter is felt through a pleasant bitterness.
It is a wine of intense perceptions, with emphasized elegance, lasting persistency and a full body. A harmonious wine that enchants in its complexity and liveliness, which will only develop over ages.

Vinification process: Grapes are desteemed and put in vinificator with skins where the first fermentation begins with indigenous yeasts. When the fermentation is finished we wait for another week and after that grapes are pressed and racked in barriques.
After 2 years of aging we bottle the base wine with approximately 7 % of grape juice from the current year instead of liquer de tirace which is used in clasic method for sparkling wines. Grape juice contains natural sugar (fructose) and indigenous yeast, so no sulfits are added.
Aging: Barrique (225 l French oak barrels) for 18 months. Bottling: After harvest in 2015.

Food pairing
It can be drunk on its own, but it will be elegantly accompanied by steak tartare, pasta and risottos, which we have enriched with meat, as well as mushrooms.
