Chardonnay 2016
The glass glows with a golden yellow colour, which reflects abundantly from tears, slowly falling along the edge of the glass.
Intense and delicate aromas are reminiscent of dried pineapple slices, baked apple, quince, candied lemon, sultana, honey, dried yellow rose, straw, sage, wild mint, vanilla, caramel, cocoa butter and roasted almonds.
The mouthfeel is soft. Our palate is pleasantly refreshed and lined with a delicate mineral note. We also notice a slight, tannic astringency, but it is pleasant and nicely incorporated into the structure.
The taste is majestic, it feels youthful, but it indicates the seriousness and a look that directs it on the long road ahead. Elegance radiates from this wine, which has a long persistency and an intense, harmonious taste.

Vineyards: Java vineyard: Southwest exposure, 6000 plants/ ha, age of vineyard 15 - 25 years, Mono Guyot training system
Soil: Opoka soil (marl & lime stone)
Planting system: 2,3m x 0,7
Yield per hectare: 6000 kg
Harvest: Hand picked in the beginning of SeptemberTHE PROCESS
Vinification process: Grapes are desteemed and put in vinificator with skins. After 2 days of cold maceration we press the grapes and naturally clarify the grape juice. Fermentation then starts in the inox tanks and finishes in the barriques.
Aging: Barrique (225 l French oak barrels) for 18 months. Bottling: April 2018
Finning: Minimum 12 months in bottles
